TASTING GUIDE
This concise guide explains how to taste coffee using our tasting flight, along with additional information about the coffee and single origins that you receive from the paddle. There are some other useful information to enhance your understanding of coffee.
WALK-IN TASTING

Left to Right, Cold to Hot
Begin the tasting experience with the Cold Brew from the top left of the selection, which generally has a milder flavour.
Progress to the Batch Brew for more bodied and intricate flavour as the heat extracts more flavour from the coffee grind.
Finally, complete your tasting with an Espresso, Milk Coffee, such as a flat white or even a Long Black.
Dessert pairing
Citrus Bite pairs well with Fruity Flavour.
Berry Slice can be paired with Floral or Tea Like.
Chocolate suits nutty and creamy, basically everything.

BLEND VS SINGLE ORIGIN
Blend
In specialty coffee industry, blending coffee is more about creating complimenting flavour profiles.
By selecting coffees with complimentary flavours, roasters can create smooth and complex flavour profiles that would otherwise be rare or unheard of with single origin coffees.
Single Origin
As its name suggests, single origin are harvested from a single place, a certain country or region. Sometimes it means a single lot on a farm.
Because these coffees are hyper-focused geographically, there’s an amazing amount of flavour diversity. This opens up an incredible world of coffee flavour that can be explored with every new bag of coffee.
BREWING METHODS
Espresso / Pressure
Made by forcing hot water, through a lightly packed of finely ground coffee. It is one of the most concentrated forms of coffee regularly consumed, with a distinctive flavor provided by crema.
Pour-Over / Filtration
Drip brew coffee, also known as filtered coffee, is made by letting hot water drip onto coffee grounds held in a coffee filter surrounded by a filter holder or brew basket and filtered out the unpleasent stuff and leaves you more clarity of the coffee.
Cold Brew / Steeping
Cold water is poured over coffee grounds and allowed to steep for eight to twenty-four hours. The coffee prepared by this method is very low in acidity with a smooth taste. Without the heat through the brewing, the flavour is less complex compared to the other two methods.
SO, WHAT IS SPECIALTY COFFEE?
In the most basic sense, Speciality Coffee refers to the number of points a coffee has received from a qualified “Q Grader” which needs to score 80 points or more to be considers as “Specialty Grade”.
But that’s not all.
Specialty Coffee can also mean a greater care for the product, an appreciation for the unique flavours found in different growing regions, a meticulous approach to all stages of the coffee lifecycle, from production to brewing, and a commitment to treating those involved in the supply chain fairly and with respect.
