La Salina is a 1.5-hectare farm owned by Tomas Fernandez Ramirez, located in the Huabal District of the Cajamarca Department in Peru. The farm is rich in clay soil, and despite the farm’s relative youth, it consistently produces exceptional coffee.
This particular lot is comprised of Caturra variety coffee. The cherries are harvested when they are fully ripe and undergo a thorough de-pulping process overnight. After de-pulping, the lot is fermented without water for around 25 hours then rinsed with water three times, and dried for approximately 25 days.
